French Toast with Berry Compote

Gorgeous eggy brioche French toast, topped with a delicious and simple berry compote.

Add raspberries, blueberries, maple syrup and a splash of water to a saucepan. Cook on low-medium heat for 10-15 mins until berries break down. Mash berries and stir regularly until left with a thick berry compote.
In a large bowl, mix together eggs, milk, cinnamon and vanilla.
Heat tbsp of butter in a non-stick pan, once melted, dip each piece of bread in egg mixture allowing bread to soak up mixture, then transfer to pan. Cook for 2 mins on each side.
Serve immediately with berry compote and garnish with icing sugar.

  • Tbsp of maple syrup.
