Did someone say GIANT Cookie Skillet? Urm, yes please! Made as healthy as we could do but still with all the satisfying sweet taste, this is sure to brighten up any evening.

Preheat your oven to 175°C / 350°F.
Mix together flour and bicarbonate of soda in a bowl.
In a separate mixing bowl, whisk together butter and coconut sugar.
Then add eggs individually and vanilla essence and whisk into butter and coconut sugar.
Add flour and bicarb of soda mixture until fully combined and you are left with a thick cookie dough. Finally, fold chocolate chips into the mixture.
Transfer mixture to a greased 28cm cast iron pan and bake for 15 mins. Allow to cool before serving.

  • 150g of butter (room temp).
  • 100g of coconut sugar (can be swapped for maple syrup).
  • 3 eggs.
  • 2 tsp of vanilla essence.
  • 50g of chocolate chips.
