Peanut Chilli Beef Noodles

Peanut Chilli Beef Noodles are one of the quickest and tastiest dishes you could possibly make. Just slap the ingredients into a pan, heat the oil, pour it in and mix. I've paired mine with beef mince for a nice hit of protein but feel free to experiment.

Bring a large saucepan of water to the boil and cook the noodles according to packet instructions. When draining the noodles, reserve a decent amount of the noodles water.
Heat the oil for the beef, in a small pan, add the beef, salt and sear for 2-4 minutes, whilst breaking up the mince, until brown all over, add the garlic and cook for 1-2 minutes, then remove from the heat and set aside.
In a separate, large pan, add the peanut butter, garlic, spring onions, crispy chilli oil, Gochugaru, sesame seeds, honey, rice wine vinegar, soy sauce. Heat the oil in a separate saucepan until sizzling hot, pour the oil over the ingredients in the large pan and whisk together until combined. Pour in a ladle of the noodle water to create a sauce, add the beef, noodles, toss until combined and you are ready to serve. I've served mine alongside some cucumber slices.

Ingredients

Serves 2

For the Beef:

  • Tsp Groundnut Oil.
  • 200g of 5% fat beef mince.
  • 0.5 tsp Salt.
  • 2 Garlic Cloves - finely chopped.
  • Tbsp Light Soy Sauce.

For the Noodles:

  • 1.5 tbsp Peanut Butter.
  • 2 Garlic Cloves, finely chopped.
  • 3 Spring Onions, thinly sliced.
  • Tbsp Crispy Chilli Oil.
  • Tsp Gochugaru, can be substituted for mild chilli powder.
  • Tbsp Sesame Seeds.
  • 0.5 tbsp Honey.
  • Tbsp Rice Wine Vinegar.
  • Tbsp Light Soy Sauce.
  • 0.5 tbsp Groundnut Oil.
  • 0.5 Cucumber, sliced, to serve.
