Peri Peri Chicken Quesadillas

Heat olive in a non-stick pan and add chicken. Cook for 3-4 mins, then add red onion and pepper, continue to cook for 5 mins, until soft. Then stir in peri peri sauce, simmer for a few mins until sauce has coated chicken and veg, then remove from heat.
Transfer 1/2 your filling across 1/2 tortilla wrap, top with cheese, tomato slices and some more cheese, then fold tortilla wrap over in half to close quesadilla. Repeat this with remaining tortilla
Toast quesadilla for 2-3 mins on each side in a non-stick pan on a low-medium heat. Your tortilla should be crunchy and your cheese should be melted. And enjoy!
