Satay Chicken Noodle Meal Prep

Our Satay Chicken Noodles is a delicious meal prep option that takes only 15 mins to knock up. Do yourself a favour and keep yourself fuelled throughout the week with some tasty but healthy food.

Mix together satay sauce ingredients until combined.
In a bowl, coat chicken breast with groundnut oil, soy sauce and season to taste. Heat a few sprays of low calorie spray in a non-stick pan, then add chicken, cook until chicken is showing a decent amount of colour and cooked through, then remove from pan.
Cook egg noodles according to packet instructions. Once cooked, in a large bowl, toss with tbsp of sesame oil.
Serve up meal prep into four separate boxes, then add radishes, carrots and red cabbage. Divide satay sauce between the four meal prep boxes.

For the Satay Sauce:

  • 2 tbsp of soy sauce.
  • 2 tbsp of peanut butter.
  • Tbsp of rice vinegar.
  • Juice of 1/2 a lime.
  • 1/2 tbsp of curry powder.
  • 2 tbsp of coconut milk.

For the Meal Prep:

  • 400g of chicken - cut into tenders.
  • 1/2 tbsp of groundnut oil.
  • Tbsp of soy sauce.
  • Salt and pepper, to taste.
  • 4 nests of noodles.
  • Tbsp sesame oil.
  • A pack of radishes - sliced
  • 2-3 carrots - peeled.
  • 1/4 red cabbage - peeled/ shredded.
